With a culinary career spanning more than three decades, Mark brings a wealth of global experience and passion to his role as Executive Head Chef at Perth Convention and Exhibition Centre. Beginning his journey with a four-year apprenticeship at the Swiss Centre in London in 1987, Mark went on to work for leading hotel groups, private businesses, and renowned venues around the world. His career has seen him master all styles of hospitality, from fine dining restaurants and private clubs to large-scale banquet catering.
After moving to Perth in 2012, Mark honed his skills at a private club before joining PCEC in 2019 as Executive Sous Chef. In February 2023, he was appointed Executive Head Chef, leading a passionate and dedicated culinary team. Together, they have celebrated numerous awards and continue to drive innovation and excellence across all aspects of the business.
